A winter gastronomic experience
you can meet only in Wattsu, Hokkaido.
The SNOW TABLE
Only one group may reserve each day.
A restaurant like no other in the world, appearing only in the winter of Hokkaido.
A silver-white snowfield stretching as far as the eye can see.
Within that silence, a single table that appears for this winter alone.
A private gastronomy limited to one group per day, made possible only in Wattsu, Hokkaido.
Firewood flame, a dining of snow and ice, and the seasonal flavors of Hokkaido’s winter alone.
Nature itself becomes the stage — a winter gastronomy you can experience
nowhere else. A winter your life will never forget.
A limited engagement from January to the end of February.
On the boundless snowfield spreading across Wattsu, Hokkaido, a special dining space built of snow and ice appears.
The silver-white panorama is yours alone, as a private chef presents a lunch course celebrating Hokkaido’s season, crafted for this day and this day only.
Silence, firewood flame, and a snowscape.
Enjoy an extraordinary gastronomic experience that only winter in Hokkaido can grant.
Begin with an aperitif hour, gathered around the firewood flame
and gazing over the silver-white snowfield that stretches as far as the eye can see.
Alongside carefully selected champagne and whisky — Hokkaido labels among them — and the drink of your choosing,
we prepare amuses such as caviar and fruits of the season.
The crystal-clear winter air and the warmth of the firewood flame
invite you into the special gastronomic experience about to begin.
In the dreamlike private dining built of snow and ice, a private chef finishes before your eyes a hot-pot dish that lavishly features hand-picked Hokkaido brand beef and the season’s crab at the very peak of its flavor.
To pair with the cuisine, a sommelier selects wines, whisky, and cocktails — Hokkaido labels foremost among them — to suit your taste. Slowly relish the marriage of flavors that only winter in Hokkaido can offer.
After the meal, gather around the fire pit, where we prepare sweets finished over the firewood flame, a digestif chosen by the sommelier, and fragrant hot drinks. Wrapped in the warmth of the flickering flame and gazing over the endless silver-white view, slowly enjoy the quiet time that flows in this place alone. Even the afterglow of the gastronomy is part of this special experience.
After filling your five senses at the SNOW TABLE, move into a quiet time of relaxation spent in your room.
Gazing at the snowscape spreading beyond the large window, you can indulge in the luxury of surrendering yourself to Thermal Spring, a free-flowing moor hot spring drawn from our own source.
A tent sauna is also available upon request. Experience the finest wellness that only Hokkaido can weave — hot spring, sauna, and the clear winter air.

The SNOW TABLE
is not an experience that can be recreated wherever snow happens to fall.
A snowfield without a single footprint, stretching as far as the eye can see.
A silence in which, listening closely, only the sound of the wind can be heard.
A firewood flame that gently wraps the freezing air.
And Hokkaido’s seasonal ingredients, at the very peak of their flavor in this season.
Should even one of these be missing, this single table is never complete.
The SNOW TABLE does not stage nature;
it is a gastronomy in which nature itself becomes the finest stage.
That is why we do not reshape this landscape.
We draw upon the beauty this land inherently holds,
and cherish passing its value on to the future.
Honoring the season’s blessings, receiving the ingredients this land has nurtured,
and shaping the experience in harmony with the environment —
that is the sustainable gastronomy we aspire to.
What we wish to offer is not cuisine and service alone.
It is for this great nature itself — Wattsu, Hokkaido — to host our guests.
An experience you can meet only in this place, this season, this very moment.
That, to the SNOW TABLE, is the ultimate hospitality.
