We offer seasonal ingredients grown in the vegetable garden on the SONEKA premises, as well as fresh ingredients grown in the land of Watatsu, where you can see the faces of the producers. At SONEKA, if requested, a chef will visit your villa to provide "local gastronomy" that embodies the rich climate and culture of Wattsu, Hokkaido.
Using carefully selected seasonal ingredients with an adventurous approach that is unique to snow country, we arrange the traditional culture of fermentation and preservation in a modern style.
We offer wild dishes cooked over a wood fire and dishes that allow you to feel the bounty of the earth.
